Preheat the oven to 375F/190C.
Crack and whisk the eggs in one bowl
In a separate bowl, combine the shredded coconut, coconut flour, and all the spices.
Slice the chicken breast in strips.
Dip the chicken strips into the egg mixture and then into the coconut mixture. Set aside on a plate and repeat until all the chicken strips are covered.
Place a frying pan on medium heat with 2 tablespoons of coconut oil, fry the chicken tenders on each side for 2-3 minutes.
Once all the chicken tenders have been fried, bake them in the oven for 15 minutes.
Serve with a side salad.
